Superior quality stainless steel blade, with chromium-molybdenum-vanadium (X50CrMoV15). Tempered to reach a hardness of 57 HRC (±2), and provide long-lasting cutting power. Manually sharpened by experts to obtain a perfect sharpening angle. The granton edge is designed to prevent food from sticking to the blade, allowing a better performance when cutting.

Textured handle, injected with Proflex, a hard material that is resistant to possible damage caused by daily use, and provides high grip. NSF approved. Extended finger guard, designed for extra protection.
